  2. Divide the ground beef into four equal portions and gently form 1/2-inch-thick patties. Season both sides with salt and pepper, and press a small indentation into the center of each to prevent bulging during cooking.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden and caramelized—about 8 to 10 minutes. Remove and set aside.
  4. Wipe the skillet clean, return to medium-high heat, and add 1 tablespoon butter. Sear the patties for 3–4 minutes per side, or until desired doneness. Place a slice of cheese on each patty during the last minute to melt.
  5. Melt the remaining butter and toast sourdough slices until golden on both sides. Keep warm.
  6. Assemble each sandwich by placing a cheesy patty on a slice of toast, topping with caramelized onions, and adding a second slice of cheese before closing with the second bread slice.
  7. Return sandwiches to the skillet over medium-low heat. Press lightly with a spatula and cook 2–3 minutes per side until the cheese is fully melted and bread is crisp and golden.
