- Pat the chicken pieces dry with paper towels to ensure proper browning. Season both sides with salt and pepper, then lightly coat with flour, shaking off any excess. This creates a thin layer that helps build a roux later and promotes a golden crust. Let the floured chicken rest for 5 minutes so the coating adheres better during cooking.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Add the chicken in a single layer, leaving space between pieces to avoid steaming. Sear for 4–5 minutes per side until deeply golden and cooked to 160°F internally. Transfer to a plate and cover loosely with foil to rest while preparing the sauce.
- In the same pan, reduce heat to medium and add mushrooms. Cook for 4–5 minutes, stirring occasionally, until they release liquid and begin to caramelize. Add minced garlic and cook for 30 seconds until fragrant, scraping up the browned bits (fond) from the bottom of the pan using a wooden spoon.
- Pour in chicken broth and bring to a simmer, allowing it to reduce slightly for 2 minutes. Gradually stir in heavy cream, Parmesan cheese, thyme, and a pinch of nutmeg (optional). Stir constantly over medium-low heat until the cheese melts and the sauce begins to thicken—do not boil.
- Return the chicken and any juices to the skillet. Simmer gently for 3–4 minutes to heat through and let flavors meld. Fold in chopped spinach and cook for 1–2 minutes until just wilted but still vibrant. Avoid overcooking to maintain texture and color.
- Taste and adjust seasoning with additional salt, pepper, or a squeeze of lemon juice. If sauce is too thin, simmer uncovered for 2–3 minutes to reduce. Off heat, stir in 1 tbsp cold butter for extra silkiness if desired. Garnish with fresh parsley and serve immediately over rice, pasta, or with crusty bread.

Notes
STORAGE: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat with a splash of broth or milk to restore creaminess. Avoid microwaving at high power to prevent curdling.
MAKE AHEAD: You can prep chicken and chop vegetables up to 24 hours in advance. Store separately in the fridge and bring to room temperature 15–20 minutes before cooking.
SUBSTITUTIONS: For a dairy-free version, use unsweetened cashew milk and nutritional yeast instead of cream and Parmesan. Gluten-free? Use rice flour or cornstarch for dredging.
PRO TIPS: Use freshly grated cheese—pre-shredded contains anti-caking agents that can make the sauce grainy. Always deglaze the pan after searing to capture maximum flavor from the fond.
SERVING SUGGESTIONS: Serve over egg noodles, mashed potatoes, or quinoa. Pair with a green salad like watermelon feta salad or grilled corn on the cob for a complete meal.
