  2. In a small bowl, whisk together warm milk, sugar, and active dry yeast. Let sit for 5–7 minutes until foamy, indicating the yeast is active. Whisk in softened butter and egg until smooth.
  3. In a large bowl, combine sifted flour and salt. Pour in the yeast mixture and stir until a shaggy dough forms. Turn out onto a floured surface and knead by hand for 8–10 minutes, or use a stand mixer with dough hook on medium for 6 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, turning to coat. Cover with a damp towel and let rise in a warm place for 1–1.5 hours, or until doubled in size. Perform the 'poke test' — press a floured finger into the dough; if the indentation remains, it's ready.
  5. Gently deflate the dough and divide into 12 equal portions. Roll each into a tight ball, tucking edges underneath. Place in a greased 9x13-inch pan, spaced snugly together. Cover and let rise again for 30–45 minutes, until puffy.
  6. Preheat oven to 375°F (190°C). Bake rolls for 18–20 minutes, rotating halfway through, until golden brown and internal temperature reaches 190°F (88°C).
