Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 15 oz can refried beans, drained
  • 1.5 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: 1/2 cup salsa
  • FOR ASSEMBLY:
  • 12-16 small flour tortillas
  • 1/4 cup vegetable oil (for frying)

  2. Step 1: Heat skillet over medium-high, sauté onion and garlic 2-3 minutes until soft. Add ground beef, cook 6-8 minutes until browned, drain fat. Season with chili powder, cumin, salt, pepper; stir 1 minute.
  3. Step 2: Mix in refried beans and 1 cup cheese over low heat 2-3 minutes until creamy. Cool 5 minutes. Fold in salsa if using.
  4. Step 3: Warm tortillas, spoon 2 tbsp filling per, fold envelope-style into tight rolls. Fry in hot oil 2-3 min/side or air fry 375°F 8-10 min, flipping. Drain and serve.
