- Preheat oven to 400°F (200°C).
- In a bowl, toss potato cubes with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, flipping halfway through, until potatoes are tender and crispy.
- While potatoes are roasting, cook the ground meat in a large skillet over medium-high heat until browned. Drain excess fat.
- Add taco seasoning and water to the skillet with the meat. Stir well and simmer for 5 minutes, or until the sauce has thickened.
- Assemble the bowls: Start with a base of shredded lettuce, then add the seasoned ground meat, roasted potatoes, diced tomatoes, and corn (if using).
- Top generously with shredded cheese.
- Serve immediately with salsa, sour cream, avocado, and jalapeños on the side.
