- Preheat oven to 375°F (190°C). Place chicken breasts on a cutting board and gently pound to ¾-inch thickness for even cooking. Drizzle with olive oil and season with black pepper and smoked paprika if using. Arrange on a parchment-lined baking sheet.
- Wrap each chicken breast with 2 slices of bacon, starting from the top and overlapping slightly. Tuck ends underneath and secure with toothpicks if needed. Space evenly on the baking sheet.
- In a small bowl, whisk together maple syrup, minced garlic, soy sauce, and a drizzle of olive oil until smooth. Set aside 2 tablespoons for serving and reserve the rest for basting.
- Bake chicken for 20 minutes. Halfway through, rotate the pan for even browning. Chicken should be partially cooked and bacon lightly crisped.
- Remove from oven and brush generously with the maple garlic glaze. Return to oven and bake 8–10 minutes more, basting once halfway, until internal temperature reaches 165°F (74°C) and glaze is bubbling and caramelized.
- Remove toothpicks, transfer to a serving platter, and rest for 5–7 minutes. Drizzle with reserved warm glaze and garnish with parsley. Serve immediately with mashed potatoes or a fresh salad.
