  • 1 lb (450g) hot or sweet Italian sausage, casings removed
  • 8 oz (225g) cremini or white mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 12 oz (340g) fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Method

  2. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned and crumbled, about 5–7 minutes.
  3. Add chopped onion and sliced mushrooms, cooking until softened and lightly browned, about 6–8 minutes.
  4. Stir in minced garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
  5. Pour in chicken broth and bring to a simmer. Add pasta, ensuring it's submerged, and cook for 12–14 minutes, stirring occasionally, until al dente.
  6. Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until sauce is smooth and coats the pasta.
  7. Season with salt and black pepper to taste. Add more broth if needed to reach desired consistency.
  8. Garnish with fresh parsley and serve immediately.
