- Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned and crumbled, about 5–7 minutes.
- Add chopped onion and sliced mushrooms, cooking until softened and lightly browned, about 6–8 minutes.
- Stir in minced garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer. Add pasta, ensuring it's submerged, and cook for 12–14 minutes, stirring occasionally, until al dente.
- Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until sauce is smooth and coats the pasta.
- Season with salt and black pepper to taste. Add more broth if needed to reach desired consistency.
- Garnish with fresh parsley and serve immediately.
